The recipe in the notes section doesn't include the amount of water to use. Based on other comments here and context in the video, I made it using 3 cups of water. 1/2 cup to dissolve the yeast, and then add the otther 2 1/2 cups along with the flour and salt. 3 cups is used in the recipe from the book, so you're right.
